Hot Shot Bakery and Café: Located in the heart of beautiful downtown Saint Augustine between the Lightner museum and the Villa Zorayda, this Bakery is open for breakfast and lunch daily, but the true attraction may be the (locally grown) datil pepper challenge.  The datil has been used by the Minorcan community in St. Augustine since the 18th century, and rates from 100,000 to 300,000 on the scoville scale. Find out if you’ve got the right “hot stuff!  Come eat a chocolate dipped datil pepper and make it on their Wall of Flame! One is enough for most, but the current winner stands at consuming about 32. Fun, high-spirited fun…and darn good eats as well.

Try pairing a refreshing Gewürztraminer with this spicy dish.

 Start with a pound of fresh salmon skinned and ready to prepare. At least 2 hours ahead spread 2 tablespoons of datil b good citrus jam on one side of salmon. Cover and refrigerate.

4 slices of great tasting crusty bread

Datil B.  Good #2 sauce

Salt, pepper, granulated garlic

 Sour cream

4 slices Provolone cheese

Preheat Panini grill

Slice salmon on vertical across center

Heat black iron skillet and pour 2 tablespoons of olive oil in pan. Sprinkle seasonings on top of jam.

Place salmon in jam side up and watch closely and sauté till white appears around edge of meat. Turn over and continue for 2 minutes.

While fish is cooking mix 2 tablespoons of # 2 with 2 tablespoons sour cream and spread on all 4 sides of bread, place 4 slices of cheese on bread. Gently remove salmon from pan and place on 2 slices of bread and top with other 2 slices.

Place on heated grill and close lid. About 5-7 minutes check for the goopy look of melted cheese. Remove and plate with #2 and jam on side as garnish and dipping.
