I am sure you’ve heard that when pairing wine with food that red wine goes well with red meat and that white wine pairs well with fish and poultry. However, this rule fails to acknowledge the complexity of ingredients that make up a dish, the time of year, your mood, your preferences, and the wide range of wines available.
I’ve put together some basic guidelines below that you can consideration when selecting a good food/wine pairing. Generally, the wine should complement the dish, but hey, it’s OK to think on your own. In my opinion, if you like it, it’s the right choice.
