We’re moving into the month of July and one can safely say there are no “dog-days” around here.   The recent bottling’s in June went off without a hitch and I am feeling pretty good about how the wines are rounding into shape–relieved is more apt!  Bottling is the last opportunity to get things “right” and I take it very, very seriously.  This involves a great deal of preparation in the weeks before the mobile bottling company shows up, like ordering glass, foils, corks and the like and getting the wines ready…
