Squash and Zucchini Carpaccio with Feta

This fanastic recipe, from Niner Winery’s recent Farmer’s Market to Table cooking class with Chef Maegen Loring, is going to impress any guest at your next outdoor fall party. Pair with Niner Winery’s 2009 Sauvignon Blanc,you simply can’t go wrong.
You’re going to love the 2009 Sav Blanc with its lovely melon and lemon rind overtones. I first experienced it on a wine tasting aboard a Holland America Alaskan Cruise. It has a wonderful grown-up taste of tart kiwi, lime and green apple. Best of all it is crisp, with a stand out mineral characteristic which I search for in premium Sav Blancs.
Squash and zucchini are wonderful compliments to a dry, crisp Sauvignon Blanc. When you add in a tangy dry cheese, like a fresh feta, you bridge together the acidity between the ingredient and the wine, resulting in an ideal pairing!

Cut off the ends of the zucchini and yellow squash, using a mandolin to thinly slice the squash. Coat in olive oil and grill green onions/scallion until they begin to brown. Pile the squash and onions onto a plate, drizzle with olive oil, salt and pepper, and crumbled feta. Finish by adding a large tomato slice and then enjoy with a glass of chilled Sauvignon Blanc. So simple and so delicious.
