Enjoy today’s food and wine pairing from Hawks View Cellars.   Hawks Cellars is a family owned and managed winery located on Chehalem Mountain in Sherwood, Oregon. It’s  just 30 minutes from downtown Portland. More of a boutique style winery, this facility produces small lot, limited quantity, ultra-premium estate grown Pinot Noir and Pinot Gris, as well as wines made from top vineyards in Oregon and Washington.

For my taste, the estate grown wines there are the standouts.   Care is evident in the wines, the tasting room and the beautiful grounds. With spectacular views of five Cascade peaks from their patio and tasting room, this is a great place to relax and spend some quality time.

Pair the chocolate mousse with the 2011 OREGON PINOT NOIR  ($38) for a real experience. Enjoy the Pinot’s  notes of cranberry and plum, intertwined with tea leaf and cracked pepper, the acidity of the vintage will provide for a wine best consumed in the years to come. 

Chocolate Mousse
Compliments of Hawk View Cellars
Yields approximatley 1 QT

Ingredients

7oz semi or bittersweet chocolate
5T water
2tsp vanilla
1¼ C sugar
8oz cream cheese, softened
1/8 c or to taste whiskey, rum, or brandy may be used

Directions

1. Melt the chocolate.
2. Add 2T water and stir until it forms a paste.
3. Combine 3T of water, 2t vanilla, and 1¼ C sugar. Bring to a boil, stirring until sugar dissolves.
4. Add to chocolate and stir to combine.
5. Then, transfer to kitchen aide with paddle attachment.
6. Add softened cream cheese to chocolate and mix until thoroughly combined, smooth with no chunks of cream cheese.
7. Then add rum, mixing until smooth. Mixture should be thick.
